Mayonnaise

Mayonnaise is quite easy to make and will give you a good workout. This DAVEggie recipe is vastly superior to any bought concoction. It should keep in the fridge for about 1 week.

Ingredients for Mayonnaise

1 egg yolk
1 tsp Dijon mustard
salt and freshly ground white pepper
175ml mixed oils, sunflower, peanut, olive rapeseed. Do not use extra virgin olive oil.
1/2 tsp white wine vinegar
1 tsp cream

 Method

  1.  Place a wet cloth on a working surface, and place a mixing bowl on top.
  2. Whisk together the egg yolk, mustard, salt and pepper in the bowl.
  3. Add the oil a few drops at a time and whisk like crazy. As the mixture thickens after about 10ml, add the oil in a thin steady stream, whisking constantly. It will probably take about 10 minutes to add all the oil.
  4. When you have added half the oil, stir in the vinegar to thin the mayonnaise.
  5. stir in the cream.
  6. Go and lie down.
