Mayonnaise is quite easy to make and will give you a good workout. This DAVEggie recipe is vastly superior to any bought concoction. It should keep in the fridge for about 1 week.
Ingredients for Mayonnaise
1 egg yolk
1 tsp Dijon mustard
salt and freshly ground white pepper
175ml mixed oils, sunflower, peanut, olive rapeseed. Do not use extra virgin olive oil.
1/2 tsp white wine vinegar
1 tsp cream
- Place a wet cloth on a working surface, and place a mixing bowl on top.
- Whisk together the egg yolk, mustard, salt and pepper in the bowl.
- Add the oil a few drops at a time and whisk like crazy. As the mixture thickens after about 10ml, add the oil in a thin steady stream, whisking constantly. It will probably take about 10 minutes to add all the oil.
- When you have added half the oil, stir in the vinegar to thin the mayonnaise.
- stir in the cream.
- Go and lie down.
