Corn Chowder

Again, Corn Chowder is a recipe where humble ingredients combine wonderfully, lifted by fresh dill and  chipotle chilli powder. It is quick and easy to prepare, and while this soup is not the healthiest, it is and hearty and comforting.  You could also add about 100g of diced smoked salmon if you wished. Serve with good bread to mop up the soup.

Gazpacho

Gazpacho, if you did not know, is a chilled soup made from raw vegetables and stale bread from the Spanish region of Andalusia. After puréeing, I like to add some chopped raw vegetables to add a bit of texture. I duly chopped a Trinidad chilli and added it to the soup, but on a whim remembering that Mrs DAVEggie is not quite such a big chilli-head as myself, decided to taste a piece – just in case.

Anyway, once I had stopped frothing at the mouth and my breathing had returned to normal, I began the laborious task of fishing out 90% of the chopped Trinidad I had added. The moral is of course, the heat of chillies can be very unpredictable, so always taste a piece first before adding!

Soupe au Pistou

Soupe au Pistou made with fresh summer vegetables, enriched with the pistou (a French version of pesto) and served with rough country bread. Wonderful.

If you follow this recipe you are guaranteed a brilliant result, and your kitchen will be filled with the perfumes of Provence!

Green Jade Soup

Green Jade Soup makes a good starter, or accompaniment to a Chinese meal. I give you two versions. The luxury version is superior if you have the time, but the quick version is surprisingly good.

Leek and Potato Soup (Potage Parmentier)

Do not be tempted to add other ingredients to this version of the French classic Leek and Potato Soup (Potage Parmentier), or you will spoil the subtlety!

I like to make a big vat of this soup, and serve is as a main course with crusty bread. But you will probably need a starter. Insalata Caprese, of Avocado Vinaigrette would go rather well. And if there is any soup left over, I serve is as a starter the next day.

Ingredients for Leek and Potato Soup

250g floury potatoes
250g leeks
1500ml water
1tsp salt
3tbsp cream
2tbsp soft herbs (parsley, chives, chervil) chopped.

Method

1. Chop the potatoes (you do not need to peel them.)
2. Chop and wash the leeks.
3. Bring the water to the boil in a large pan, and add the vegetables       and salt.
4. Simmer for 30 minutes.
5. Liquidize, and pass through a sieve.
6. Away from the heat, stir in the cream.
7. Ladle into soup bowls, sprinkle with the chopped herbs and a                really good grind of coarse black pepper.

Note: the chilled version is Vichyssoise, and is also very good.

Indian Spiced Lentil Soup

Indian Spiced Lentil Soup is velvet smooth, mild, and very colourful: orange soup with a white spiral of coconut milk, and a green and red garnish.

It is quite substantial , and could be a meal in itself served with Naan bread and maybe a bowl of plain rice. Or you could serve is as an accompaniment to a dry Indian curry.

Good with: Roasted Vegetable Biryani, Samosas. it also makes a great starter for other dishes.
