Hummus

Hummus is great on toast for breakfast, or served as a starter on grilled pitta bread, or as a side dish to any Middle Eastern recipe.

Try adding 1 tbsp of sun-dried tomato paste, or 3 tbsp chopped coriander to the hummus ingredients before blitzing, and using this as a dip for crudités.

Ingredients for Hummus

275g chickpeas
1 1/2 tbsp tahini paste
1 1/2 tbsp lemon juice
1 garlic clove
1/2 tsp smoked paprika
1/2 tsp ground cumin
yogurt
salt
pepper

Method

1. Simply blitz all the ingredients together to form a smooth paste, thinning with yogurt as necessary.
2. Season with salt and pepper to taste.
3. Scoop into an attractive bowl, drizzle a little olive oil over the surface and place in the fridge until needed (will keep up to a week)

Serving tip: stir in a sparing amount of homemade harissa to the humus.
