Spinach Gnocchi with Tomato Sauce and Buffalo Mozzarella has to be one of my all-time favourites; fluffy little pillows of scrumptiousness sizzled in butter and bathed in a rich tomato sauce, enlivened by small creamy cubes of buffalo mozzarella and fresh herbs.
