Insalata Caprese is another classic Italian antipasti, and rightly so! Use the best quality tomatoes, preferably beefsteak (though the quality can be iffy in Northern Europe) and buffalo milk mozzarella.
Classically slices of tomato and mozzarella are drizzled with extra virgin olive oil and garnished with black olives, capers, basil and rocket leaves. My version uses fresh pesto.
